White Chocolate and Fruit Cake Recipe
EQUIPMENT
Mixing bowl
Flour sieve
Small cooking pan 2x
Spatula
Either 8-inch (20cm) square cake tin 2x, or 9-inch (22.5cm) round cake tins 2x. (See recipe conversion guide). Grease tins.
Toothpick or fork
Wire cooling rack
Greaseproof paper
BAKING TIME
Preheat oven to 175C (350F or Gas Mark 4)
Bake for 25-30 minutes
INGREDIENTS
Cake:
Plain flour – 310g (10.9 oz)
Baking soda – 5g (0.18 oz)
Baking powder – 2g (0.07 oz)
Salt – 3g (o.11 oz)
White chocolate (chopped)- 170g (6 oz)
Water – 120ml (0.25 pints)
Butter (soft) – 225g (7.9 oz)
Caster sugar – 300g (10.6 oz)
Buttermilk – 235ml (0.5 pints)
Eggs – 3 medium or 2 large
Topping:
White chocolate (chopped) – 200g (7 oz)
Plain flour – 20g (0.7 oz)
Milk – 235ml (0.5 pints)
Butter (soft) – 225g (7.9 oz)
Caster sugar – 200g (7 oz)
Vanilla extract – 5 ml
Fresh berries e.g. raspberries or strawberries (washed) – 1 small box
METHOD
Cake:
1) Sieve flour, baking soda, baking powder, salt in a bowl and mix.
2) Add water to a small pan and when hot, remove from heat. Add the chopped white chocolate and stir continuously with a spatula. Aim for a smooth consistency. Allow to cool to room temperature.
3) Add butter and sugar to a bowl and mix until fluffy and light.
4) To the bowl, add each egg whilst beating the mixture.
5) Alternate by adding some flour mix and buttermilk to the bowl, whilst stirring continuously.
6) Add the melted white chocolate from the pan and mix well.
7) Pour equal amounts of batter into the cake tins and place these into the oven for 25-30 minutes.
8) Remove from oven and test each cake by inserting a toothpick or fork. If the toothpick or fork comes out clean without mess, the cake is baked properly. Otherwise, place the cakes back in the oven for a few more minutes, then retest again.
9) Remove cakes from the oven and allow to cool for 15 minutes.
10) Place cakes on the wire cooling rack and cool to room temperature.
Topping:
1) Add chopped white chocolate, flour and milk to small pan and stir continuously over a medium heat. Aim for a thick, creamy consistency. Allow to cool to room temperature.
2) Add butter, sugar and vanilla extract to the bowl and mix until fluffy and light.
3) Add the melted white chocolate mixture from the small pan into the bowl. Beat the mixture continually until it is even and creamy.
Assembling the cake:
1) Place down a sheet of greaseproof paper at least 12-inch x 12-inch (30cm x 30cm) on a flat, kitchen surface.
2) Place the base of the cake in the center of the greaseproof paper.
3) Pour one-third of the chocolate mixture on the base layer of the cake. Spread evenly with a spatula.
4) Place the top layer of cake on top of the base layer.
5) Pour the rest of the chocolate mixture over the top of the cake. With a spatula, spread the mixture evenly and down the sides.
6) Finish by decorating the top of the cake with berries.
